Quick Peanut Noodles

Serves: 4

  • 250g fresh Noodles
  • 100ml Chicken Stock
  • 1 tbsp Root Ginger, grated
  • 3 tbsp Soy Sauce
  • 3 tbsp Peanut Butter
  • 2 tbsp Honey
  • 2 tsp Hot Chilli Paste
  • 3 Garlic Cloves, crushed
  • 4 Spring Onions, chopped
  • 30g Peanuts, chopped

Method

  1. Cook noodles in a large pot of boiling water until done. Drain.
  2. Meanwhile, combine chicken stock, ginger, soy sauce, peanut butter, honey, chilli paste & garlic in a small saucepan. Cook over medium heat until peanut butter melts & is heated through. Add noodles, toss to coat. Garnish with spring onions and peanuts
