Cheats Caesar Salad

Cheats Caesar Salad.jpegShopping & Ingredients List:

  • 250g Quorn Vegan Chicken pieces
  • 1 Cos (or Romaine) lettuce, chopped
  • 1 tbsp Parsley, chopped
  • 4 Spring Onions, sliced
  • 4 tbsp Vegan Croutons
  • 1 tbsp Vegetable Oil

Dressing

  • 5 tbsp Vegan Mayo
  • 2 tbsp Almond Milk
  • 1 tbsp Lemon Juice
  • 1 Garlic Clove, crushed
  • 2 tsp Tahini
  • Salt & Pepper, to taste
  • 1 tsp Dijon Mustard
  • 1 tsp Capers
  • 1 tbsp Olive Oil
  • 1 tbsp Parsley, chopped

Method

  1. To make dressing, Blend everything together for a few seconds until well mixed.
  2. Heat up non-stick frying pan, add oil & stir-fry vegan chicken for a minute or two. Set aside.
  3. In a large bowl or smaller bowls, add the lettuce & stir in the dressing so everything is well coated. Add the tofu chicken pieces & mix in with the parsley & spring onions.
  4. Top with the croutons.
