Shopping & Ingredients List:
- 250g Quorn Vegan Chicken pieces
- 1 Cos (or Romaine) lettuce, chopped
- 1 tbsp Parsley, chopped
- 4 Spring Onions, sliced
- 4 tbsp Vegan Croutons
- 1 tbsp Vegetable Oil
Dressing
- 5 tbsp Vegan Mayo
- 2 tbsp Almond Milk
- 1 tbsp Lemon Juice
- 1 Garlic Clove, crushed
- 2 tsp Tahini
- Salt & Pepper, to taste
- 1 tsp Dijon Mustard
- 1 tsp Capers
- 1 tbsp Olive Oil
- 1 tbsp Parsley, chopped
Method
- To make dressing, Blend everything together for a few seconds until well mixed.
- Heat up non-stick frying pan, add oil & stir-fry vegan chicken for a minute or two. Set aside.
- In a large bowl or smaller bowls, add the lettuce & stir in the dressing so everything is well coated. Add the tofu chicken pieces & mix in with the parsley & spring onions.
- Top with the croutons.
