Citrus, Thyme & Chilli Oil

  • 1 Lemon, zest & juice

  • 1 Lime, zest & juice

  • 2-3 Red Chillies

  • 1 Red Chilli, deseeded & finely chopped

  • 6 Thyme Sprigs

  • 600ml Extra Virgin Olive Oil

Method
1. Place lemon & lime juice with zest, finely chopped chilli, some thyme springs, into a bowl. Pour over the oil, cover & infuse in a cool dark place for 3-4 days.
2. Strain oil into a sterilised bottle, add remaining thyme & whole chillies & use as required.
