Lemon Pancake Stack

  • 4 Scotch Pancakes

  • 100g Lemon Curd

  • 1 tsp Lemon Rind, grated

  • 30g Cinder Toffee, crumbled

  • 60g 0% Total Greek Yogurt

  • 2 tbsp Runny Honey

Method
1. Put yogurt, lemon curd, lemon rind into bowl & mix.
2. Make pancake sandwich by placing lemon ‘cream on one pancake, sprinkle with cinder toffee crumbs, add more lemon ‘cream’ & top with another pancake. Drizzle with honey before serving.
