Lemon Squares

  • For the Base
  • 200g Plain Flour
  • 75g Icing Sugar
  • 175g Butter, softened

For the Filling

  • 3 large Eggs
  • 300g Caster Sugar
  • 3 tbsp Plain Flour
  • 4 tbsp Lemon Juice

Method

  1. Preheat the oven to 190c (170 fan), 375f, gas mark 5. Using a little butter grease a 23x33cm (13″x 9″) baking tin.
  2. Combine the base ingredients &pat dough into prepared tin.
  3. Bake for 20 minutes in the preheated oven, until slightly golden.
  4. While the crust is baking, whisk together eggs, caster sugar, flour & lemon juice until frothy. Pour this lemon mixture over the hot base.
  5. Return to the oven for an additional 20 to 25 minutes, or until light golden brown.
  6. Cool on a wire rack & cut into squares.
