Shopping & Ingredients List:
- For the Base
- 200g Plain Flour
- 75g Icing Sugar
- 175g Butter, softened
For the Filling
- 3 large Eggs
- 300g Caster Sugar
- 3 tbsp Plain Flour
- 4 tbsp Lemon Juice
Method
- Preheat the oven to 190c (170 fan), 375f, gas mark 5. Using a little butter grease a 23x33cm (13″x 9″) baking tin.
- Combine the base ingredients &pat dough into prepared tin.
- Bake for 20 minutes in the preheated oven, until slightly golden.
- While the crust is baking, whisk together eggs, caster sugar, flour & lemon juice until frothy. Pour this lemon mixture over the hot base.
- Return to the oven for an additional 20 to 25 minutes, or until light golden brown.
- Cool on a wire rack & cut into squares.
