Pear Muffins

Pear Muffins.jpegShopping & Ingredients List:

  • 100g Almond Flour
  • 1 tsp Baking Powder*
  • ½ tsp Bicarbonate of Soda
  • 1 Pear, peeled & grated
  • 4 tbsp Coconut Oil, melted
  • 115ml Runny Honey

*use gluten-free if required

Method

  1. Preheat oven to 190c (170 fan), 375f, gas mark 5.
  2. In a bowl mix together the dry ingredients.
  3. Add the grated pear. Mix well. Add oil & honey & beat on low speed with a hand mixer.
  4. Divide between papercase lined muffin tin. Bake for 25 mins. Allow to cool at room temperature.
