Protein Brownies

Protein Brownies.jpegShopping & Ingredients List:

  • 400g Sweet Potatoes, diced
  • 3 tbsp Unsweetened Cocoa Powder
  • 60g Chocolate Protein Powder
  • 20g Rolled Oats*
  • 1 Egg, beaten
  • 2 tbsp Runny Honey
  • 1 tsp Baking Powder*
  • 1 tsp Coconut Oil, melted
  • 2 tbsp Chopped Mixed Nuts
  • 1 tsp Coconut Oil, for greasing*use gluten-free if required

Method

  1. Preheat oven to 180c (160 fan), 350f, gas mark 4.
  2. Boil sweet potatoes in a pan of water for around 15 minutes. Draini. Tip the cooked sweet potato on a plate so it can begin to cool.
  3. In a food processor add the oats & blitz so they resemble a flour.
  4. Add the protein powder, egg, honey, baking powder, coconut oil & chopped nuts to the food processor, give it a quick blitz.
  5. Add the sweet potato to the food processor  & mix everything through.
  6. Grease a brownie tin & pour in the mixture. Bake for around 30 minutes.
  7. Allow to cool completely before removing from the baking tray & slicing into 8 pieces.
