Shopping & Ingredients List:
- 150g Plain Flour
- 2 tbsp Caster Sugar
- 2 tbsp Baking Powder
- small pinch of Salt
- 1 tbsp Coconut Oil, melted
Method
- Sift the flour, sugar, baking powder & salt into a large bowl.
- Whisk 300ml of water & oil together in a small bowl.
- Make a well in the centre of the dry ingredients, pour in the wet. Stir just until blended; mixture will be lumpy.
- Heat a lightly oiled non-stick frying pan or griddle over medium-high heat.
- Drop batter by large spoonfuls onto the griddle, & cook until bubbles form and the edges are dry. Flip & cook until browned on the other side. Repeat with remaining batter.
