Vegan Breakfast Pancakes

  • 150g Plain Flour
  • 2 tbsp Caster Sugar
  • 2 tbsp Baking Powder
  • small pinch of Salt
  • 1 tbsp Coconut Oil, melted

Method

  1. Sift the flour, sugar, baking powder & salt into a large bowl.
  2. Whisk 300ml of water & oil together in a small bowl.
  3. Make a well in the centre of the dry ingredients, pour in the wet. Stir just until blended; mixture will be lumpy.
  4. Heat a lightly oiled non-stick frying pan or griddle over medium-high heat.
  5. Drop batter by large spoonfuls onto the griddle, & cook until bubbles form and the edges are dry. Flip & cook until browned on the other side. Repeat with remaining batter.
