Beat the Bacon

Serves: 4

Beat the Bacon.jpegShopping & Ingredients List:

  • 6 rashers of Bacon, chopped
  • 1 Red Onion, sliced
  • 100g Cherry Tomatoes
  • 2 tbsp Coconut Oil
  • 1 Beetroot, peeled & chopped
  • 50g Stilton, crumbled
  • bunch of Basil torn

Dressing

  • 3 tbsp of Bacon Fat 
  • 1 tbsp Red Wine Vinegar
  • 1 tbsp Maple Syrup
  • 1 tbsp Dijon Mustard

Method

  1. Cook the bacon in coconut oil in a non-stick pan for 5 minutes on a medium flame.  Add onion, cherry tomatoes, & beetroot. Cook for a further 3-4 mins.
  2. Reserve 3 tbsp of bacon fat for the Bacon Dressing.
  3. In a large bowl toss all the ingredients, except stilton together with the dressing. Sprinkle the stilton on top. Serve warm.
  4. For the dressing: Whisk all the ingredients together & dress the Beat the Bacon Salad
