Shopping & Ingredients List:
- 6 rashers of Bacon, chopped
- 1 Red Onion, sliced
- 100g Cherry Tomatoes
- 2 tbsp Coconut Oil
- 1 Beetroot, peeled & chopped
- 50g Stilton, crumbled
- bunch of Basil torn
Dressing
- 3 tbsp of Bacon Fat
- 1 tbsp Red Wine Vinegar
- 1 tbsp Maple Syrup
- 1 tbsp Dijon Mustard
Method
- Cook the bacon in coconut oil in a non-stick pan for 5 minutes on a medium flame. Add onion, cherry tomatoes, & beetroot. Cook for a further 3-4 mins.
- Reserve 3 tbsp of bacon fat for the Bacon Dressing.
- In a large bowl toss all the ingredients, except stilton together with the dressing. Sprinkle the stilton on top. Serve warm.
- For the dressing: Whisk all the ingredients together & dress the Beat the Bacon Salad
