White Bean & Kale Soup

Serves: 4

White Bean & Kale Soup.jpegShopping & Ingredients List:

  • 1 bunch of Kale, chopped
  • 1 Onion, peeled & diced
  • 250g Diced Ham 
  • 1 tbsp Olive Oil
  • 400g tin chopped Tomatoes
  • 1 tsp minced Garlic
  • 1 large tin Cannellini Beans, drained & rinsed.
  • 500ml Chicken Stock
  • 1 tbsp dried Oregano
  • Salt & Pepper to own taste

Method

  1. Heat olive oil in large saucepan over a medium heat. Stir in garlic & cook for 1 min. Add onion & cook for a further 3 mins.
  2. Stir in tomatoes and stock. Bring to the boil. Add the kale and ham (or cooked pork). Reduce heat & simmer. Add the beans & oregano. Cook for a further 5 mins. Serve immediately
