Shopping & Ingredients List:
- 1 bunch of Kale, chopped
- 1 Onion, peeled & diced
- 250g Diced Ham
- 1 tbsp Olive Oil
- 400g tin chopped Tomatoes
- 1 tsp minced Garlic
- 1 large tin Cannellini Beans, drained & rinsed.
- 500ml Chicken Stock
- 1 tbsp dried Oregano
- Salt & Pepper to own taste
Method
- Heat olive oil in large saucepan over a medium heat. Stir in garlic & cook for 1 min. Add onion & cook for a further 3 mins.
- Stir in tomatoes and stock. Bring to the boil. Add the kale and ham (or cooked pork). Reduce heat & simmer. Add the beans & oregano. Cook for a further 5 mins. Serve immediately
